for one loaf:
2 bananas, slightly over ripe
2 eggs large
1 ½ cups whole wheat flour
1 cup sugar
½ cup flour
½ cup butter
½ cup walnuts
¼ cup hot water
1 tsp baking soda
Directions:
Preheat oven to 325°F (160°C).
Peel and mash the bananas. You should
end up with 1 cup when mashed.
Break the eggs into a bowl and beat slightly.
Soften the butter and chop the nuts.
In a mixing bowl, cream together the butter
and sugar. Fold in the eggs and mashed
bananas, blending until smooth.
Sift the flour, salt and soda into a
bowl and mix in the whole wheat flour.
Fold the dry ingredients into the banana
mixture adding the water as the mixture
becomes dry.
Fold in the nuts, ensuring that they are
evenly spread throughout the banana bread
mixture.
Lightly grease a 9" x5" loaf
pan and spoon in the banana bread mixture.
Bake in the center of the oven for approximately
70 minutes until done.
Allow the banana bread to cool slightly
before removing from the loaf tin to complete
cooling.
Serve this whole wheat banana bread sliced
with butter (adding honey or syrup if
wanted).
