Apricot
Almond Bread
Ingredients for 1 1/2 pound loaf:
1 1/3 cup water
2 cup bread flour
3 tablespoons vegetable oil
2 tablespoons yeast
3 tablespoons honey
Add at appropriate time:
1 egg
1/2 cup dried apricots, diced
2/3 teaspoon salt
1/2 cup raisins
2/3 teaspoons lemon peel, grated
1/4 cup almonds, Chopped
1 cup whole wheat flour
1 cup rolled oats
Directions:
Mix ingredients using the dough cycle
on machine, take out the dough and divide
it into three parts. Make a long braid
and join the ends to form circle. Let
rise for 45-60 minutes Bake at 350°
for about 25 minutes. Cool slightly and
mix 1/2 cup icing sugar with a little
water to make a glaze, then drizzle over
top. Makes large 1 1/2 lb. loaf.
