
Cranberry Soda Bread
This delicious soda bread recipe adds a new twist
to traditional Irish bread by adding tasty cranberries.
The sugar and caraway seeds make this Irish soda bread
a lot sweeter, more of and after dinner bread than
one you’d have with meals. Other than that it’s fairly
traditional soda bread.
Ingredients
2 tbsp granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 1/4 cup white flour
1/4 cup butter
1 tbsp caraway seeds
1 cup dried cranberries
1 egg
2/3 cup plus 2 tablespoons buttermilk
Directions
Preheat oven to 375 degrees F
Mix together the egg and buttermilk
Mix together dry ingredients in a separate bowl
Cut butter into the dry ingredients until mixture
has the consistency of wet sand
Stir in the raisins and caraway seeds
Add the egg and buttermilk mixture
Knead slightly until the dough is well mixed
Pat the dough into a greased round cake pan or round
loaf pan
Cut an X across the top and brush it with milk
Bake for the loaf 40 minutes
