Ingredients:
1 1/2 cups boiling water
2 Earl Grey tea-bags ( can be decaffeinated
)
One 8-ounce bag mixed dried fruit, chopped
( about 1 cup )
1 large egg
1/2 cip milk
1 tbsp unsalted butter, melted or room
temperature
3 tbsp orange marmalade, ginger marmalade,
or apricot preserves ( you can
use sugar-free fruit spread )
1 cup light brown sugar
2 3/4 cups unbleached all-purpose flour
1cup dark or golden raisens
1/4 cup chopped candied orange peel or
currants
2 3/4 tsp baking powder
2 tsp apple pie spice
3/4 tsp salt
Directions:
1. Pour the boiling water into a 4-cup
glass measuring cup and add the tea-bags.
After letting the bags steep for 10 minutes,
remove them and squeeze them dry.
2. Add the dried fruit, and stir well.
Let the fruit stand at room temperarture
to plump. It could take anywhere from
1 to 4 hours for the fruit to reach room
temperature, so be patient and check it
frequently.
3. Add the Ingredients to the bread pan
according to the manufacturer's instructions.
Add in the fruit and fruit soakings with
the liquid ingredients.
4. Program your machine for the Quick
Bread/Cake cycle and use the Dark setting
for the crust. Press Start.
5. At the end of the cycle stop and reset
your machine for the Bake Only cycle.
Bake for an additional 20 minutes. Your
Bara Brith is ready when it has skrunken
a little from the sides of the pan, the
top is firm and the sides are dark brown.
6. When your Bara Brith is done, remove
it promptly from the machine. Let it stand
in the pan for 10 minutes, then turn it
out, right side up on the rack. Let it
cool completely before slicing. For the
best storage use plastic wrap and keep
it in the refridgerator.
