for Using Cake Pans
There are a few special considerations
to take into account when using your cake pans.
Here is a helpful check list that you can use
when selecting and baking with cake pans.
• Use cake pans that are the correct size for
the recipe: if the pan is too big the cake will
come out flat and dry, and if it’s too small
the cake will bulge and run down over the sides.
• The best cake pans are make from shiny aluminum
or gray, non-stick metals which reflect heat
away from the cake, resulting in a moist interior
and a light, crisp crust.
• Only fill cake pans half way so that the
cake has room to rise; this may be difficult
to judge with odd shaped pans such as Bundt
Cake Pans, so measure 1st with water to determine
the half way point.
• To prevent the cake from sticking to the
pan the bottom should be well greased or sprayed
with cooking spray.
