This is a mild, full-bodied bread made with ancho chilies. There's just a touch of fire, maybe a two on a scale of ten. Ancho chilies are among the mildest of chilies but they are full of robust garden flavor. The color is a rustic, hearty brown.
Ancho chilies are the most commonly used chilies in Mexico. They are mature, dried poblano peppers with a mild, robust flavor with just a touch of a raisin-like tone. They are used extensively to add depth of flavor to mole and sauces. They are absolutely wonderful in breads.
