
Tomato Bread
Tomato bread is one of the artisan breads more popular around the world, making use of hand shaped, extended fermentation and traditionally hearth oven baked, although, anyone can bake it in traditional, microwave or electric ovens, and partially in bread machines.
Tomato Bread Recipe
Ingredients:
3 1/2-4 1/2 cups flour
1 1/2 cups skinned and chopped ripe tomatoes
1/2 warm water
1 packet yeast
2 tablespoons sugar
2 tablespoons safflower oil
1-tablespoon fresh chopped herbs (basil, parsley, oregano, dill, bay leaves)
2 teaspoons salt
- Dissolve the yeast in the water. Apart puree the tomatoes.
- Blend yeast, tomatoes, sugar, oil, salt and herbs together,
- Stir in as much flour as this mix can be easily absorbed.
- Knead to smooth about 5 minutes
- Place dough in a greased bowl let rise covered until twice its size.
- Punch down forming one large loaf or two smaller ones.
- Place into greased pan covered and let rise until double again
- Bake at 400ª F for 15 minutes, and then lower to 350ºF for another 30 minutes.
