Sharpen Knives
The main bit of knife care most
cutlery owners will have to master (apart from
forming diligent cleaning habits) is learning
how to sharpen knives. Here are the basics of
kitchen knife sharpening of a variety of knife
sharpening tools.
Knife Sharpening Stone
1. Place a wet or dry knife sharpening stone
flat on a stable surface.
2. Grasp the knife by its handle and place the
blade at a 10 to 25 degree angle to the knife
sharpening stone.
3. Draw the knife across the stone towards you
several times, then repeat the process on the
other side of the blade, until both are satisfactorily
sharp
Knife Sharpening Rod
1. Hold the knife sharpening rod in one hand
and hold the knife by its handle in the other
hand.
2. Put the knife just under the handle of the
knife sharpening rod with the knife at a 10
to 25 degree angle to the rod
3. While holding the knife sharpening rod steady,
draw the knife blade down the rod, repeating
this motion until the entire cutting surface
of the blade has been drawn across the rod on
both sides.
Commercial Knife Sharpener
Though it’s always wise to read the manufacturers
instructions, this process typically involves
drawing the blade through a mechanism in one
direction until the knife is sharpened. Don’t
do this to your good knives, though; use a rod
or stone for them.
