We put both buttermilk and soda in the mix. (The buttermilk reacts with the soda to create extra bubbles for a lighter texture than the yeast alone.) Then we slipped some potato flour into the mix. Potato flour is hygroscopic and absorbs moisture to keep the bread softer and moister. It also adds a bit of sourdough-like flavor. Then we made it easy to make. You just form a loaf--actually, each mix makes two loaves--and slip it into a pie pan. The pie pan acts like a bread pan to hold your loaf in a perfectly round shape. Dust it with a bit of flour, slash the top with a sharp knife, bake, and eureka!--you have an authentic Irish bread to serve your family. (We include complete recipe directions.)
